First released with the 1990 vintage in 1993, Bin 407 was created to showcase the growing availability of exceptional Cabernet Sauvignon fruit. The nose opens with an enticing lift of violet, mulberry leaf, star anise, cinnamon, and a hint of orange zest. On the palate, it leans more toward Tuscan elegance than Bordeaux formality, yet remains unmistakably South Australian in character. Savoury notes intertwine with a sour cherry grip and a subtle cherry pip oak influence, while darker fruits and the distinctive flavour of green Spanish stuffed olives add depth.
